International Conference on Food & Society 2025: Toward a Sustainable Future for Traditional Cuisine in Ho Chi Minh City

Ho Chi Minh City, Vietnam – A major international event, the International Conference on Food & Society 2025, will be held from November 26 to 28, 2025, at Vinpearl Landmark 81, Autograph Collection Hotel (720A Dien Bien Phu, Binh Thanh District).. The conference is co-organized by the University of Economics and Finance (UEF) and HUTECH, in collaboration with the Asia Pacific Food Studies Network.

Gastronomization and Sustainable Traditional Food Systems

The core theme of this year’s conference is “Gastronomization & Sustainable Traditional Food Systems,” focusing on the intersection between sustainability and the “gastronomization” of traditional food systems. The conference seeks to explore the dynamic interactions between sustainable development and the process of integrating traditional food systems into contemporary gastronomy Organizers invite scholars, experts, and policymakers from diverse disciplines to submit original research examining how traditional food practices can be adapted to address contemporary challenges while preserving their cultural and ecological values.

• Historical ContextTraditional food systems encompass agricultural practices, food processing methods, and culinary traditions that have evolved over generations within specific communities. They are characterized by diversity in ingredients, farming techniques, and cultural significance.
Sustainable Practices: Traditional food systems often embody principles of sustainability through practices such as agroecology, permaculture, and community-supported agriculture (CSA).
Gastronomization: This term refers to the elevation of traditional culinary practices into contemporary gastronomy, with an emphasis on high-quality ingredients, sustainability, and cultural authenticity. Through gastronomization, traditional food systems gain broader recognition and appreciation, empower local communities, and create economic opportunities. The Mediterranean Diet is a prominent example of a sustainable traditional food practice adapted to modern tastes and recognized globally for its health benefits.

Distinguished Keynote Speakers

The conference features renowned figures in the culinary and academic fields:
Chef Darren Teoh: Owner of the acclaimed Dewakan restaurant, ranked among Asia’s 50 Best Restaurants (2019 and 2022), awarded two Michelin stars in 2024, and honored with a Green Star in 2025 for his commitment to sustainability. He was also recognized in the World Selection 2024 at the Best Chef Awards in Dubai.
Dr. Maria Kozhevnikov: Associate Professor at the Department of Psychology, National University of Singapore, with research affiliations at Harvard Medical School and the Martinos Center for Biomedical Imaging. Her keynote will explore the hypercreativity of chefs as artistic innovators.
Dr. Yanet Acosta: Professor of Journalism and Communication at Rey Juan Carlos University, Madrid, Spain. She is an award-winning food journalist, novelist, and pioneering scholar in Food Studies, affiliated with the UNESCO Chair for Communication Research at her university.
